Banana-Blueberry Protein Muffins

OOPS I did it again ;)

This is the easiest Blueberry Banana Protein Muffins period. And they are delicious, trust me on this one babe.

Each muffin (protein 7g, carbs 10g, fat 2) 90 calories.

Preparation: 10 minutes

Cook time: 20 minutes

Ingredients
  • 1 cup egg whites
  • 1 egg
  • 1 1/2 cup old-fashioned rolled oats
  • 1/2 cottage cheese
  • 1 ripe banana
  • 35g vanilla protein powder or your favorite protein powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

1. Preheat oven to 355 degrees Fahrenheit and grease your muffin mold; I like to spray with coconut oil.

2. Bake for 20 min.

3. Enjoy!

My muffins look nothing like yours. Did you mean oat flour? Cause I used rolled oats and mixed it in the food processor. Combined everything and baked…

Hi! I love this recipe and would like to try it. Is it supposed to be a 1/2 cup of cottage cheese. And should I blend all ingredients together then bake? Thank you:-)
